I’m baaaccck! Just been on a 2 week holiday in the UK! My time was spent catching up with friends and family, as well as driving down narrow winding roads to the English countryside to visit my grandmother. There’s little that makes me happier than being outdoors, filling my lungs with fresh air and spending hours walking around picking wild blackberries and elderberries! As much as I’m missing it already, I’ve come back inspired and ready to jump straight back into work.
To celebrate my return to Manila, I’ve made a smoothie with one of my favourite Filipino products – mangoes! I’ve also juiced some carrots which helps our cells to assimilate nutrients such its high levels of vitamin A (1 cup of carrot juice contains 320% of your daily recommended intake of vitamin A)! The ginger gives it a lovely warmth, and has anti-inflammatory properties as well as promoting better digestion.
I’ve also added a teaspoon of one of my favourite superfoods – baobab powder from Organic Burst. The nutrient dense baobab fruit comes from a tree native to Africa. Gram for gram, it has nearly 10 times the amount of vitamin C you would get in fresh oranges, and also contains a bunch of minerals to keep our bodies happy, such as calcium, copper, iron, magnesium, potassium and zinc. Health benefits aside, it’s one of my favourite supplements for its taste! It’s quite citrusy with a bit of a tang, and in my opinion, goes perfectly with mangoes.

- 3 large carrots
- 1 mango
- 2cm piece of ginger
- Optional: 1 tablespoon baobab powder
- Juice the carrots and ginger (makes approx 1 cup of juice).
- Scoop the flesh out of the mango and blend with the juice and baobab powder.
- Sip and love!

No, I find that 1 cup of juice from the carrots & ginger is enough 🙂
