I love it when I wake up in the morning and remember that I’ve prepared a cheeky pot of goodness in the fridge! Overnight oats are an ideal way to start your day, especially if you’re short for time in the morning. Once you’re in the routine of making these you’ll have no excuse to skip breakfast, in fact I guarantee you’ll be looking forward to it!
Oats are beneficial to our health for so many reasons. Being rich in fibre, they keep you fuller for longer, lower cholesterol levels, and they’re great for digestion. Using coconut milk to soak the oats makes them wonderfully creamy, with the added bonus of it smelling incredible too! When I can, I try to substitute sugar with natural ingredients. Dates are just perfect for this – they just taste like caramel and I have to say I’m completely addicted to them. I’ve added some slivered almonds to mine to add a bit of crunch, but you can use any nuts you like.
- Half a cup of oats
- 3 pitted dates
- ½ tsp cinnamon
- 1 cup coconut milk
- 1 tsp chia seeds
- 1 tbsp slivered almonds
- Mix the oats, cinnamon, chia seeds and almonds. Put in a cup.
- Put the coconut milk and dates in a blender, and whizz for a minute or so until there are no big chunks left.
- Pour the milk over the other ingredients, mix, and cover. Leave in the fridge overnight.
