Simple Cauliflower “Fried Rice”
I’ve heard of cauliflower being used as a rice substitute for quite a while now, and I’ve finally gotten around to giving it a go myself! I don’t believe in carbophobia and I love my rice, but it’s nice to mix it up sometimes, with the added benefit of squeezing in some extra veg in our diets! It only took a couple of minutes to put together and I have to say I really enjoyed it – very simple and light and fluffy in texture. Cinnamon & Sultana Yellow Rice
A few years ago I lived and worked in India. I was based in Mumbai for 3 months, which was the most insane and wonderful experience. I have so many great memories from my stay. Walking down my road was a total sensory overload; a cacophony of people haggling at the market, rickshaws tooting and Bollywood hits being played on the radio.
