Rainbow Coconut Rice Salad

Ingredients
  • 1 cup rice (I mixed brown and red)
  • 1 avocado
  • 1 yellow pepper
  • 6 cherry tomatoes
  • 1 cucumber
  • 1 red onion
  • 1 carrot
  • ¼ cup blueberries
  • ¼ cup fresh grated coconut
  • slivered almonds
  • For the dressing:
  • 2 tbsp coconut oil
  • 2 tbsp apple cider vinegar
  • dash of calamansi/lime
  • sea salt and cracked pepper to taste
Instructions
  1. Boil rice with a pinch of salt. Once cooked, let it cool.
  2. Dice avocado, cucumber, onion, capsicum and carrot and tomato into small pieces. Add to the cooled rice, along with the coconut, slivered almonds and blueberries. Toss until mixed evenly.
  3. Drizzle dressing on salad and mix again.
