Healthy Raw Chocolate Truffles

  • 12 medjool dates
  • 10 tablespoons almond meal
  • 2 teaspoons coconut oil
  • 2 tablespoons cacao powder
  1. Pitt the dates and pulse in a food processor until the mixture becomes a paste.
  2. Gradually add the almond meal, coconut oil and cacao powder.
  3. When everything is combined into a smooth dough, roll into tablespoon size balls.
  4. Dust with cacao powder, or roll in crushed pistachios. Store in an airtight container in the fridge.
