Rainbow Rice Paper Rolls

Serves: 4 rolls
  • 4 rice paper sheets
  • 1 carrot
  • 1 cucumber
  • ½ a small purple cabbage
  • 1 mango
  • one handful of spinach leaves
  • one handful of basil leaves
  • one handful of mint leaves
  • 2 tbsp tahini
  • 2 tbsp water
  • half a lime
  • 1 tsp soy or tamari
  • 2 tbsp honey
  1. Prepare the filling by cutting the carrots and and cucumbers into matchsticks. Finely slice the purple cabbage and cut the mango into thin strips.
  2. Fill a large, shallow bowl with hot water. Submerge a sheet of rice paper until it becomes soft. Carefully remove and lay on a flat surface.
  3. Place some of the spinach, basil and mint leaves in the centre of the rice paper. Top with the carrot, cucumber, cabbage and mango, and gently fold the sides in and roll tightly. Repeat to fill all 4 rolls.
  4. For the dipping sauce, simply mix all the ingredients and serve with the spring rolls.
