Cauliflower "Fried Rice"

Ingredients
  • 1 large head of cauliflower
  • ½ cup of cherry tomatoes
  • 1 red onion
  • coconut oil
  • sea salt
  • ½ tsp curry powder
Instructions
  1. Break the cauliflower into florets.
  2. Transfer to the food processor and pulse until you have a rice like consistency.
  3. Finely chop the onion and halve the cherry tomatoes.
  4. Heat some coconut oil in a frying pan and cook the onion with the curry powder for a few minutes until softened.
  5. Add the tomatoes, cauliflower and stir fry for another couple of minutes. Salt to taste.
