Ten Minute Zucchini Noodles

Serves: 2 servings
  • 2 zucchini
  • 4 cloves of garlic
  • 1 onion
  • 1 avocado
  • 6 cherry tomatoes
  • 4 black olives
  • 10 basil leaves
  • ½ a lemon
  • 1 tbsp sunflower seeds
  • olive oil
  • sea salt
  • cracked pepper
  1. Use a julienne peeler to grate the zucchini into thin noodles. The inner core of the zucchini (with the seeds) can be put aside and saved for another time.
  2. Crush and finely chop the garlic. Dice the onion.
  3. Heat up some olive oil in a pan, and cook the garlic and onion for a few minutes.
  4. Add the zucchini noodles and stir fry for a couple more minutes. Turn off the heat.
  5. Cut the tomatoes in half, and the olives into small pieces. Add to the pan along with the basil leaves and sunflower seeds.
  6. Season with salt and pepper to taste. Gently mix.
  7. Finally, cube the avocado and add to the noodles.
  8. Add a squeeze of lemon, serve and enjoy!
