Cinnamon & Sultana Yellow Rice

  • 1 cup rice (I used a mix of brown & red)
  • 1 red onion
  • 1 stick of cinnamon
  • ¼ cup sultanas
  • 1 tsp turmeric
  • 4 cloves of garlic
  • ½ tsp sea salt
  • coconut oil
  1. Wash the rice & finely chop the onion and garlic.
  2. Heat up some coconut oil in a pan and fry the onion, garlic, cinnamon stick & turmeric for a few minutes.
  3. Add the rice to the pan and fry for a couple more minutes. Add the salt & sultanas.
  4. Put 2 and a half cups of water in the pan. Bring to a boil, cover, then simmer for 30 minutes. Make sure to keep an eye on the rice whilst it's cooking. Add extra water if necessary.
