Ahhhh I just love pomegranates! I use them frequently in my recipes for their delicately sweet flavour, as well as the gorgeous colour. Those little jewel like nuggets make any dish look pretty! As a kid, I’d ask my parents to buy some for me, and not knowing any better, I would literally just hack the thing in half and try to pick out all the seeds. After what seemed like an eternity of picking (and multiple stained items of clothing), I’d throw the messy remains away and vow to never eat pomegranate again. But… they taste so good!…

Simple Cauliflower “Fried Rice”
I’ve heard of cauliflower being used as a rice substitute for quite a while now, and I’ve finally gotten around to giving it a go myself! Crispy Almond Raisin Brittle
I kind of came up with this recipe by accident. The other day I was experimenting with some ingredients to make a cake crust, when I realised it would also make great biscuits! They’re not overly sweet but have a super nutty crunch (especially when kept in the fridge!) and make for the perfect snack with a cuppa tea or coffee. You can store them at room temperature in an air tight jar if you prefer a slightly softer biscuit. Apart from being so easy to make, you only need 4 ingredients! Well, if you don’t count the pinch of salt. I didn’t even need to add sugar as there is enough sweetness from the raisins and the coconut oil for me. Now I have to come up with a proper cake recipe using this as the crust!…
Sun Dried Tomato & Cashew Pesto
Eat it with pasta, spread it on a sandwich, make dressing with it or use it as a dip. I’m a self confessed pesto addict. I think I could eat it every single day and not get sick of it. Today I decided to make a batch with some sun dried tomatoes as I found a beautiful box of them on sale at the supermarket. I’ve also substituted cashews for the classic pine nuts you would find in most pesto. Cashews aren’t as expensive but they taste just as good! All you have to do is soak the tomatoes and blend them with the rest of the ingredients! Idiot-proof, really….
