If you’ve seen my instagram feed you would know that I’m a huge fan of juicing. My body seems to love them and I’ve seen noticeable changes in my health when I incorporate them into my daily routine. I’ve also recently invested in a slow juicer (I bought a brand called Hurom). These machines gently press the juices out of fruit and vegetables to retain their maximum nutrient content. Being self employed, my work schedule is always unpredictable, and I never know when or where I will be eating. My favourite days of the week are undoubtedly Saturday and Sunday. For me the weekend = market time, and accordingly, the ritual hoarding of organic produce. This week I picked up some gluten free bread, some beautiful avocados and a pomegranate (amongst loads of other things)!

Here you have one of my favourite ways to use up left over veggies! These juicy tomatoes are delicious with practically anything inside. I’ve used mushrooms, onion and spinach, but you can substitute them with any leftovers that you have at home. I find that zucchini works nicely too. Like most of my recipes, this is super easy to make. All you do is scoop out the insides of the tomatoes, cook them with some veggies, stuff the mixture back in and pop them in the oven for 10-15 minutes….

I’m certainly happiest when I’m busy busy busy! This past week was particularly hectic for me with loads of work and late nights. I love it, but the long hours started to take their toll, and I felt the onset of a cold coming along. Most of my friends know that I’m a huge fan of curry. From Indian, to Japanese, to Thai – they are packed full of flavour and so satisfying!  When I lived in the UK I often cooked with lentils, but I’ve found them to be scarce here in Manila. Thankfully, I stumbled upon the amazing mongo (mung) bean. If you cook them long enough, they’ve got that similar creamy texture to lentils, and just melt in your mouth. Not only are they delicious, but they also pack quite a punch nutritionally.
